Why It Matters

The restaurant Âma Terra — originally designed by Pierre Gagnaire — sits inside a stunning 19th-century Second Empire conservatory. The origin story of the property is genuinely extraordinary.
A renovated 18th-century villa on an 8,000 m² estate slap in the middle of Aix-en-Provence, five minutes' walk from Cours Mirabeau. The Second Empire scalloped roof, panoramic wallpapers reprinted from old documents, and centuries-old olive trees in the garden make this feel like a private manor — not a hotel. Opened in July 2019 by Jean-Brice Garella, who discovered only after buying the half-abandoned property that its 18th-century noblewoman owner's family name was, remarkably, Saint-Ange.
