The combination of a Michelin/Tablet-listed locanda and a restaurant run by two Japanese chefs — Shimpei Moriyama and Sayuri Tanaka — who cook Tuscan and Maremmana cuisine with Japanese precision is genuinely unusual. The estate produces its own wine, olive oil, saffron, lavender, and seasonal vegetables, which feed directly into the kitchen.
Tenuta Merlò is a seven-room working agricultural estate a few minutes from Bolgheri, sitting among olive groves, vineyards, and lemon trees in the Tuscan countryside. The property was restored with care and filled with antique furniture — every room has a distinct personality, from hand-painted iron bedheads to toile de Jouy wallpapers and marble-topped dressers. But the real talking point is the restaurant, where two Japanese chefs apply rigorous technique to deep-rooted Tuscan tradition with results that genuinely surprise.
