TAYUTA opened in September 2024 on Hiai Island (Hinoshima), a sacred island within Unzen Amakusa National Park, and wasted no time earning a Michelin Key. Twelve standalone suite villas fan out across an 11,000-sqm coastal plot, each with a private onsen fed by the 'Amakusa Kinsen' — a golden hot spring drawn from 820 meters underground that turns reddish-brown on contact with the air. The kitchen runs a serious 16-course tasting menu anchored in hyperlocal Amakusa seafood and cattle, served on ceramics made by island potters. Getting here takes real commitment, which is exactly the point.

TAYUTA operates what it calls the 'Amakusa Gastronomy Lab' — ongoing collaboration with local fishermen, farmers, potters, and food producers to explore Amakusa's food culture. Guests experience this through meals, but the ethos extends to visiting local ceramic workshops (30+ potters on the island).
Wild bottlenose dolphins live in the Amakusa waters year-round. Dolphin watching cruises depart from the local area — the hotel can assist with arrangements.
Amakusa's 120 islands include World Heritage-listed Hidden Christian churches (Kakure Kirishitan sites) and tiny fishing villages with centuries of history. The hotel can arrange boat excursions. Free shuttle to Matsushima Port and Fisherina Amakusa makes departure easy.
