A 200-year-old working masseria in the agricultural heart of Sicily, run by the fifth-generation Saeli-Rizzuto family. Manfredi and Sara converted the former cattle stalls, granary, and winery into a quietly elegant eco-retreat in 2008. There are 18 rooms total — no TVs, no minibars — because the whole point is to unplug and pay attention to what's actually around you: 600 hectares of wheat fields, olive groves, and cherry orchards, a pool looking out over rolling hills, and cooking workshops where you make bread from grain grown on the property.

How you'll actually spend your days.
An aperitif served in the golden wheat fields as the sun drops. Sparkling wine and savoury appetizers, transport to the location included. Available daily June through mid-September, weather dependent. About one hour.
A hamper of daily-changing seasonal food and a bottle of wine served at the estate's treehouse. Available daily mid-May to mid-September, weather permitting. Starts at 1:30pm, lasts about two hours. Transport to the location included.
Guests can participate in the cherry harvest in June on the estate's orchards.
Saturday class dedicated to arancini and panelle — two iconic Sicilian street food staples. Instructor Melissa also prepares a third dish chosen on the day. Informal, family-style atmosphere.
Monday workshop focused on classic Sicilian pastry: brioche, granita, and a third recipe chosen by the instructor Melissa. Runs 10am–1pm in the kitchen bakery area. Lunch is included. Certificate of participation given at the end.
Friday workshop tracing wheat from field to oven. Make bread from estate-grown grain and taste it with Susafa's own extra virgin olive oil. Deep dive into how their oil is produced.
Wednesday workshop devoted to fresh pasta. Covers the history and varieties of Sicilian wheat and flour before getting hands-on with dough. Runs 10am–1pm, lunch included.
A guided tour of Susafa's kitchen garden and aromatic herb garden — 50+ plant varieties including tomatoes, zucchini, peppers, thyme, rosemary, camomile, wild rocket, and more. Available daily on request.
A day at sea aboard Susafa's own sailboat Quasar, departing from Palermo toward the Mondello coast (or Cefalù). A full day with a captain guide, a cove swim stop, and a prepared lunch on board. Available April through October on request. Transfer to/from Palermo available at additional cost. Non-guests can book directly with a 30% deposit.
An outdoor dinner under the stars with a dedicated setup and reserved staff service. Tasting menu features produce from the garden. Available daily June through mid-September, weather permitting (moves indoors if needed). Drinks not included.
Every Thursday at 6pm, Manfredi personally leads a tasting of up to 10 biodynamic and naturally-fermented Sicilian wines, organized by region. In summer, it moves outside to the pergola. One of the standout experiences on property — book in advance.
