Artistic and nature-rooted. Art hangs throughout, rooms have individual personalities, and the Michelin restaurant dining room features gold leaf walls, a moss-covered fireplace, and a glass wall filled with colored sand shaped like dunes. Relaxed enough that dogs are welcome in the hotel and Grand Café, serious enough that the tasting menu runs 13 courses.
The 'Discover Merlet' menu (€149, 9 courses) is the most accessible entry point to the Michelin restaurant — available Tue–Thu and Sun evenings, and Fri/Sun lunch, and must be booked in advance with the full table.

Family-run since 1984, Merlet has turned a quiet dune-side village into a serious culinary destination. The Van Bourgonje family oversees 28 individually styled rooms — ten of them themed suites named for the surrounding landscape — and a Michelin-starred restaurant that has held its star since 1998. The hotel sits right on the sheep meadow with direct views of the Schoorl dune ridge, the widest dune landscape in the Netherlands.
