Emilia-Romagna's first Wine & Balsamic Relais, Roncolo 1888 sits within the 320-acre organic Tenuta di Roncolo estate in the Matildic Hills, midway between Parma and Reggio Emilia. The Prestia family opened it in 2020 after a meticulous five-year restoration of the 17th-century borgata around Villa Manodori — keeping original frescoes, exposed beams, and hand-painted wallpapers intact while furnishing rooms with mid-century Italian pieces and four-poster beds. Everything orbits the land: the estate produces award-winning organic Lambrusco and sparkling wines, traditional balsamic vinegar aged in the Acetaia di Canossa, and olive oil — and guests get to taste it all.

Guided tasting tour of the historic acetaia, one of the largest traditional balsamic producers in the region. Walk through the ageing rooms where 400+ wooden barrels quietly mature Aceto Balsamico Tradizionale over 12–25 years. The experience ends with a tasting paired with aged Parmigiano Reggiano. A complimentary balsamic sample is provided to all guests; the full guided experience is bookable on request.
Estate chef teaches cappelletti and tagliatelle from scratch, using the classics of the Food Valley. Ends with a family-style private lunch of your own creations. Maximum 8 persons.
Hamper prepared with estate wines and a curated selection of regional delicacies, set up in one of Roncolo's scenic spots among the vines. Subject to weather. Arranged through reception.

Visit the world-famous Museo Ferrari at Maranello, followed by a driving experience on Modena's racetrack, and optional lunch at Massimo Bottura's Cavallino restaurant. Arranged privately by the hotel.
