Why It Matters
Holds one of France's longest unbroken Michelin star runs — continuously starred since 1968, with two stars from 1971 through at least 2024. Chef Jean Coussau and his niece Clémentine run the kitchen, championing hyper-local Landes produce: foie gras, Chalosse beef, Adour River salmon, Magescq asparagus. Patriarch Bernard Coussau was a pioneer in using fresh (not preserved) duck foie gras, which shaped the region's culinary identity.
A 19th-century manor house in the Landes pine forest, about 25 minutes inland from the Atlantic. The Coussau family has been running the place since 1952 — four generations deep — and their gourmet restaurant has held a Michelin star continuously since 1968, two stars from 1971. It joined Relais & Châteaux in 1999. The 17-acre estate has its own working vineyard producing Petite Lagune wine, an orchard, ornamental gardens, and a padel court. This is not a beach resort; it's a proper food-focused country house where the restaurant is the main event.
