A 48-room boutique hotel that has occupied this quiet Saint-Germain street since 1979, built on the foundations of the 13th-century Grands-Augustins Abbey. Designer Laura Gonzalez reimagined the interior — antiques, velvet, warm woodwork, canopy beds, Toile de Jouy prints, and Carrara marble bathrooms — without stripping out the soul of the old stones. The result feels less like a hotel and more like a very well-appointed Parisian home that happens to have a Guerlain spa in the vaulted medieval cellars.
