REF Kumamoto is built around a single, earnest concept: the bath. Opened in December 2019 in the heart of Kumamoto's Shinshigai shopping district, the 229-room hotel centers on public baths fed by what is reputedly Japan's finest groundwater, with an open-air wooden bath overlooking a carefully designed Japanese garden. Rooms lean into modernist Japanese minimalism — muted tones, clean lines, local wood and textile details — and the standout breakfast is genuinely rooted in the region, from Akagyu beef burgers you grill yourself to dried Amakusa seafood over charcoal.
