A centuries-old Mallorcan finca turned 24-suite boutique hotel, Predi Son Jaumell sits on the east coast of the island — about as far from Palma's tourist bustle as you can get. The building (14th-century, declared a Mallorcan historic heritage site) is dressed in rough-hewn limestone with sky-blue shutters, and the interiors pull off the tricky modern-meets-ancient contrast with real conviction.
