Parador de Baiona
Historic grandeur meets lived-in Galician charm. Stone staircases, wooden-beam ceilings, and period furnishings throughout. The whole property feels like a slightly faded aristocratic estate rather than a slick luxury resort — which is most of the appeal.
Always request a sea-view room when booking — standard rooms face the interior courtyard and get almost no natural light
Why It Matters
One of the most storied properties in the Paradores network. The site of the old fortified town of Baiona (founded 1497) and the location where news of Columbus' discovery of the Americas first reached Europe in 1493. Three kilometres of intact medieval walls surround the grounds — you can walk the full circuit. Sir Francis Drake failed to take this fortress in 1585.
A 122-room hotel built inside the walls of a medieval fortress on the Monterreal Peninsula, jutting into the Bay of Baiona. The granite bulk of the building is part neo-Gothic palace, part Galician manor house — the conversion happened between 1963–1966. The town of Baiona sits just outside the castle gate, and you're about 20 km from Vigo and minutes from the Portuguese border.
