op Oost | Boutique Hotel & Restaurant het Kook Atelier
Farm chic eco-conscious retreat. Think raw linen, natural materials, edible gardens, and zero fuss about things that don't matter. Adults-only, deliberately quiet. Not a party hotel.
Book a Wier Lodge if you want the most character — split-level seaweed barn with a sleeping loft under the skylight and views to the Wadden Sea dike.
Why It Matters
Holds a Michelin Green Star (awarded 2024), Green Key Gold certification, 5-star Dutch hotel rating, and is part of SLH's Considerate Collection. The restaurant, het Kook Atelier, ranked #77 in the We're Smart Green Guide and 14 points in Gault & Millau. Nearly everything on the plate comes from within 150 metres of the hotel.
Op Oost is a 12-suite, adults-only boutique hotel in an 18th-century farmhouse and restored seaweed barn on the eastern edge of Texel, just 150 metres from the Wadden Sea. The place is run by Valerie Jongeneel and chef Joram Timmerman — she handles the eco-conscious hospitality, he runs a Michelin Green Star restaurant that grows, forages, and ferments almost everything within arm's reach. Farm chic meets Nordic philosophy: COCOMAT mattresses, vegan homemade cosmetics, free-range chickens roaming the grounds, and a tasting menu that maps the ecosystems of the island.

How you'll actually spend your days.
De Schorren salt marsh, the Slufter, Bollenkamer, and the Dennen pine forest are all minutes from the hotel. Staff provide personalised tips on the best spots and responsible foraging routes. Seal sightings (grey and harbour seals) are common on nearby sandbanks June–August.
Bikes available to rent at the hotel. Texel's flat terrain and extensive cycle paths make it one of the best cycling islands in the Netherlands. The hotel provides route suggestions for wild dune trails, salt marsh edges, and the less-visited eastern villages.
Guests are encouraged to wander the hotel's edible garden freely — picking fresh herbs for tea, snacking on strawberries, or simply exploring the saline kitchen garden beds. The 6-hectare 'De Waelde Tuin' orchard nearby grows apples, pears, and plums using permaculture and agroforestry techniques.
Guided tour of the historic oyster harbour — once the beating heart of Texel's oyster and seaweed trade in the 18th century. Learn to gather oysters yourself, hear the history, and open a few on the spot with a glass of Vuurzee Cuvée Prestige or Vonkelbier beer. One of the signature experiences at Op Oost.
Guided walk with the hotel's gardener through the edible garden, wild hedgerows, native shrubs, berries, and Wadden seaweed. Learn to identify wild edible herbs, understand birds and the Wad ecosystem, and come back with ingredients that may end up on tonight's plate. Available Monday to Friday at 11am or 2pm.
Behind-the-scenes visit to the fish market in Den Oever — the hotel organises trips by boat. A look into where Op Oost sources its North Sea fish and crustaceans.
Yoga sessions bookable in or near the 6-hectare historic orchard ('De Waelde Tuin') a short distance from the hotel.
