Ole Liese sits inside Gut Panker, a working 500-year-old estate in Holstein Switzerland — Trakehner stallions graze just outside the windows. The hotel traces its name to a favorite horse of Prince Friedrich Wilhelm von Hessenstein, whose 19th-century caretaker was rewarded with a beer license on the same spot. Today it's 23 individually furnished rooms and suites spread across the main house, the Alte Schule, and the Alte Meierei, with a restaurant that has held Michelin recognition and a lavish table-service breakfast included in the rate.
