Why It Matters

Nobu Hotel Chicago opened in 2019 in the heart of Fulton Market, bringing 115 rooms of Japanese minimalism to Chicago's most restaurant-dense neighborhood. The brand — born from the collaboration between Robert De Niro and Chef Nobu Matsuhisa — runs the whole show here: the design, the food, the service philosophy. It's a compact, 12-floor property with a serious dining operation. Look, the hotel could coast on the Nobu name alone, but it earns its keep with meticulous room details, a solid indoor pool, and one of the better hotel rooftop bars in the city.
