Why It Matters

Holds 3 Michelin stars continuously since 2007 (and starred without interruption going back to 1926). One of very few 3-star restaurants outside Paris, and a founding member of Les Grandes Tables du Monde and Relais & Châteaux. Chef Eric Pras won the Meilleur Ouvrier de France title in 2004 and sources ingredients on a near-zero-kilometer philosophy from Burgundy's terroir.

Maison Lameloise is a former 15th-century coaching inn on the old Route Nationale 6 through Burgundy, operating as a hotel and restaurant since 1921. Three generations of Lameloise family chefs built it into a 3-Michelin-star institution before handing the kitchen to Eric Pras — a Meilleur Ouvrier de France — in 2009. It's a small, 16-room property above one of France's great dining rooms, which means the hotel side is quiet and intimate rather than resort-like.
