The only place in France where you can sleep inside a Palace-rated estate, soak in thermal springs dating back 18,000 years, eat at a restaurant that has held three Michelin stars since 1977, and attend a cooking class rooted in the original Grande Cuisine Minceur created by Michel Guérard. All in a village of a few hundred people.
Les Prés d'Eugénie is a 19th-century Gascon palace spread across 8 hectares in the tiny spa village of Eugénie-les-Bains, deep in the Landes countryside of southwestern France. Founded in 1974 by Christine and Michel Guérard — one of the founding fathers of nouvelle cuisine — it holds France's Palace designation (awarded 2017), has kept three Michelin stars on its flagship restaurant since 1977, and just added a first star to its second restaurant, L'Orangerie, in 2025. Today it's run by the Guérard daughters, Adeline and Eléonore, with chef Hugo Souchet carrying the kitchen forward after Michel Guérard's passing in August 2024.
