Les Frères Ibarboure is a 13-room, four-star hotel sitting on 2 hectares of wooded parkland in the hills above Bidart, in the French Basque Country. Brothers Xabi (savory, Maître Cuisinier de France) and Patrice (pastry, Meilleur Ouvrier de France 2019) are the third generation running this family estate, and their Michelin-starred restaurant is the main event. But the hotel itself — quiet rooms with private loggias, a heated outdoor pool, and a forest-edge Nordic Lodge with sauna and hot-tub — more than justifies the stay on its own.

How you'll actually spend your days.
A seat between the kitchen and the pastry station for 2–6 guests. Starts with champagne and amuse-bouches before dinner moves to the main dining room. Available for lunch and dinner, subject to availability.
Hotel-provided electric bikes for exploring Bidart, the coast, and the Basque Country. Available on request from reception.
Seasonal pool (May–November) set in the garden, visible from all room loggias. Deckchairs and parasols provided. Non-guests can access the pool (plus Nordic Lodge) for €40 per half-day or €60 for a full day.
The chefs do their morning picking from an on-site aromatic herb garden and greenhouse that supplies the restaurant. Not a formal tour, but the garden is visible from the property and guests regularly encounter the team in the garden at breakfast time.
Non-hotel guests can book access to the heated pool and Nordic Lodge. Half-day (10am–2pm or 2pm–6pm) at €40/person; full day at €60/person. Pool towels provided.
