Why It Matters
Michel Bras invented the molten chocolate cake (coulant) here, and his gargouillou — a sophisticated assemblage of vegetables, herbs, seeds, and flowers that can contain up to 85 ingredients — became one of the most referenced dishes in modern French gastronomy. Sébastien voluntarily withdrew the property from the Michelin guide for a period, then returned; it now holds two Michelin stars. A Relais & Châteaux member since 1994, it also holds the European Ecolabel for sustainable tourism practices since 2013.
Le Suquet sits on the Puech du Suquet, a small hill above Laguiole on the windswept Aubrac plateau. The building — conceived in 1992 with architects Éric Raffy and Philippe Villeroux using local granite and slate — springs from the earth like a basaltic buron, the traditional pastoral shelter of the region. Thirteen rooms and suites look out through enormous bay windows onto open pastureland, and the two-Michelin-starred restaurant is what most people actually come for. Sébastien Bras has run the kitchen since 2009, building on a philosophy his father Michel started: cook what the plateau gives you.

Guests can arrange excursions in a Devinci vintage electric car — a 1930s-styled vehicle with modern electric drivetrain — for exploring the Aubrac plateau and surrounding countryside. Organized through the hotel concierge.
