Why It Matters
Home to L'Occitane's global flagship spa and the world's first Ecocert-certified Sustainable Wellbeing Center. Chef Louis Gachet holds both a Michelin star and the Meilleur Ouvrier de France title. The entire property was renovated using 80% local artisans, locally quarried stone, and eco-certified materials.
A 17th-century convent — built in 1613 — that spent three years (2021–2023) being transformed into one of Provence's most serious luxury hotels. The original chapel, bell tower, cloister, and monks' footpath are all still here. What's new is a 2,500 m² L'Occitane flagship spa (the world's first Ecocert-certified Sustainable Wellbeing Center), a Michelin-starred restaurant run by MOF chef Louis Gachet, and 49 rooms dressed in natural oak and Provençal linens. Run by maîtres de maison Fabien and Valérie Piacentino, who keep things feeling like a very well-appointed family home rather than a corporate hotel.
