A Dutch couple, Iwan and Nancy van Es, left the Netherlands in 2008 to build this wooden eco-hotel from scratch in the rolling hills of Landes Chalosse. The result is 11 thoughtfully designed lofts and a standalone ecolodge, all certified with the European Ecolabel. Think big rooms, private terraces overlooking farmland, a 6×13m pool, and an ecological 'Dutchtub' wood-fired spa tub reserved exclusively for guests of the lodge. It's genuinely quiet here — proper countryside quiet — and the hosts are on hand without hovering.
