Why It Matters
La Nauve holds a Michelin star for its restaurant Notes (2026), is a Relais & Châteaux member, and sits on the grounds of a working 19th-century cognac distillery estate. Chef Anthony Carballo (ex-Le Meurice and Shangri-La Paris) runs both the gourmet restaurant and the brasserie, drawing menus directly from the hotel's own vegetable garden, beehives, henhouse, and fish pond. It's the most compelling luxury option in a town that's long needed one.
A former cognac distillery estate turned 5-star hotel, La Nauve opened in 2023 on a 12-acre riverside property just outside Cognac's old town. The Belle Époque manor house is the real showstopper: pale marble lobbies, a bifurcated staircase, and an extraordinary chandelier made of hundreds of pale-blue Murano-glass discs hanging above the bar. Only 12 rooms across two buildings — the main mansion and the Petit Chai — which keeps things intimate and the service genuinely personal.
