A former 18th-century charterhouse — originally home to monks who likely worked the surrounding vineyards — La Bastide en Gascogne sits directly opposite the Thermes de Barbotan hot-spring complex in the heart of old Gascon village. Its long stone arches, ochre facade, white shutters, and century-old plane trees make it look more like an Italian palazzo than a French country house. The Barthélémy/Guérard family has owned and refined it since 1957, stripping it down from 48 to a tight 25 rooms and reimagining every inch under the eye of Christine Guérard. The thermal spa taps into a 20,000-year-old mineral spring. The food — now led by Chef Jonathan Bordes — is serious without being ceremonious.
