Why It Matters
Earned a Michelin star in March 2024, retained in 2025. Chef Mathias Dandine is a 20-year Michelin veteran in Provence — this is his second starred property. The cuisine draws directly from Jean-Baptiste Reboul's 1897 Provençal cookery bible, updated with contemporary precision. The only 5-star hotel with a starred restaurant in the immediate Aix hinterland.
A nearly 200-year-old Provençal auberge on the village square of Calas-Cabriès, completely overhauled and relaunched as a 5-star boutique hotel by Michelin-starred chef Mathias Dandine and hotelier Serge Perottino. The 30 rooms have a retro-chic personality — jewel greens, burnt orange, pastel pink, marble bathrooms, botanical prints — and the on-site restaurant earned its first Michelin star in 2024. It sits 10 minutes from Aix-en-Provence and 15 minutes from Marseille Provence Airport, which makes it a genuinely useful base, not just a pretty stopover.
