The site has been inhabited since hermits occupied it for centuries, which gives the whole concept an unusually coherent sense of place.
A 4-star design hotel perched on the heights of Mont Cindre, opened in 2017, with sweeping panoramic views of Lyon and the Monts d'Or. The 26 rooms draw deliberately on the site's monastic history — rough concrete walls, oak floors, chocolate-brown curtains — giving the place a stripped-back calm that's hard to fake. The restaurant, Cuisine-À-Manger, is the heart of the operation: an open kitchen where Chef Nicolas Moreau runs a daily-changing menu rooted in Lyonnais gastronomy.
