Why It Matters
Holds 1 Michelin star continuously since opening in 2007. Member of Relais & Châteaux. Chef Cédric Béchade trained at the Hôtel du Palais in Biarritz and worked at the Plaza Athénée with Jean-François Piège. His self-imposed rule: 100% of ingredients sourced from within 200km. Marion runs the rooms and guest experience side with equal seriousness. The whole property is theirs - not a group hotel.
A 350-year-old Basque farmhouse turned personal chef's project. Cédric and Marion Béchade bought the 1672 building in 2006, added an unapologetically modernist wing, and redesigned all 12 rooms with Marion's eye for bold color and local craftsmanship. The food is the main draw: a 1 Michelin star dinner service, a bistronomic lunch concept called Le Café Basque launched in October 2024, and Sunday brunch with wood-fired cooking. Sitting on a hill 7km from Saint-Jean-de-Luz, looking directly at La Rhune mountain - you get the views from almost every room and from the all-glass dining room.
