A 17th-century Basque farmhouse turned 4-star hotel, family-owned and operated since 1962 — now in its fourth generation. The Isabal family runs the whole thing: Stéphane in the dining room, Xavier behind the Bistrot, and brothers Martin (kitchen) and Louis (pastry) flying the Michelin flag. Rooms are decorated with antique furniture and paintings by Basque masters; the kitchen garden out back supplies the table. It sits right in the middle of Ainhoa, one of the most beautiful villages in France, about 25 km from Saint-Jean-de-Luz.
