Why It Matters
One Michelin star (2026 guide) for Martin Isabal's market-driven Basque-Béarnais cuisine. The restaurant is the gravitational center of the whole property — guests come as much to eat as to sleep. Three-generation lineage of cooks and sommeliers gives the place a living-history quality that no boutique newcomer can fake.
A 17th-century Basque farmhouse turned 4-star hotel, family-owned and operated since 1962 — now in its fourth generation. The Isabal family runs the whole thing: Stéphane in the dining room, Xavier behind the Bistrot, and brothers Martin (kitchen) and Louis (pastry) flying the Michelin flag. Rooms are decorated with antique furniture and paintings by Basque masters; the kitchen garden out back supplies the table. It sits right in the middle of Ainhoa, one of the most beautiful villages in France, about 25 km from Saint-Jean-de-Luz.
