Why It Matters
One of only a handful of genuinely comfortable countryside hotels in Gipuzkoa with a Michelin-level restaurant on site. Iriarte Jauregia is a 17th-century Basque palace, fully restored and quietly sitting in the green valley of Bidania-Goiatz — about 25 minutes south of San Sebastián. The original stonework is still intact throughout the 21 rooms, and dark timber ceiling beams run overhead like ribs in a vaulted church. The food is taken seriously here: two restaurants, including a Michelin-recognised tasting menu by chef Enrique Fleischmann, make this a genuine gastronomic destination, not just a countryside sleep.
