Why It Matters

Italy's first Unbound Collection by Hyatt property, housed in an authenticated 13th-century palazzo (the former Palazzo Minerbetti). The Butterfly Terrace rooftop bar delivers some of the best views over Florence's skyline. La Cave wine cellar holds over 3,000 vintages. The building itself once hosted Florentine nobility including the Grand Duke of Tuscany.

IL Tornabuoni sits inside the Palazzo Minerbetti — a 13th-century building that once hosted Cosimo de' Medici III — on Florence's most glamorous pedestrian shopping street. Hyatt's Unbound Collection took it over in late 2021 and handled it well: original frescoes and marble remain intact while 62 rooms got bold gem-tone wallpapers, parquet floors, and midcentury-inspired furniture that feels fresh rather than fussy. No pool, no full spa — but the rooftop Butterfly Terrace and the location right between Ponte Vecchio and the Uffizi make up for a lot.
