Why It Matters

One of the rare places on earth where you can sleep 200 meters from a three-Michelin-star kitchen that also holds a Michelin Green Star for sustainable cuisine. The Marcon family has held three stars since 2005. Paul Marcon won the Bocuse d'Or in 2025. Restaurant Marcon scored 99 points on La Liste 2026. The hotel is EU Ecolabel certified, geothermally and solar-powered, and the only four-star Relais & Châteaux property in its remote corner of the Massif Central.

Hotel Marcon sits atop a volcanic plateau at 1,130 meters in the Massif Central — a genuinely remote destination you reach entirely on purpose. Opened in 2008 as part of the Marcon family's sprawling village operation, the four-star property is built into the hillside itself: ten underground rooms (nine at 50m², one suite at 95m²) accessed through an artistic underground corridor, naturally temperature-regulated by sun and earth, each opening onto a private terrace with views across the Ardèche mountains to Mont Ventoux and the Oisans. The big draw is the attached three-Michelin-star Restaurant Marcon, where Régis, Jacques, and Paul Marcon (Bocuse d'Or 2025) cook some of France's most celebrated seasonal, terroir-driven food — mushrooms in autumn, lamb in spring, mountain herbs all year. But the hotel is genuinely worth staying in for its own sake: EU Ecolabel certified, salt-treated pool for guests only, complimentary access to the family's Les Sources du Haut Plateau spa next door.

You reach them via an underground corridor decorated by local artists — the surprise arrival is part of the experience. Each has a private terrace looking out over the Ardèche mountains. Inside: local Ardèche and Auvergne timber throughout, high-quality bedding, a sitting area with sofa, spacious dressing room, Japanese toilet, large round bathtub (fits two), walk-in Italian shower, and quality bath products.
