Pre-book The Forge — weekend dinner slots go fast, especially Friday and Saturday evenings

Why It Matters

The Forge restaurant is the standout — two AA Rosettes, dry-aged beef sourced from Aubrey Allen (suppliers to the Royal household), and an open grill fired with oak and beech logs. For the wider city, this is also the best-designed hotel in Chester by some distance, with rooms that actually have a point of view.

Hotel Indigo Chester opened in 2019 as the sharpest new arrival in a city dripping with Roman walls and black-and-white Tudor architecture. It's an IHG brand property, managed by Castlebridge Hospitality, but it carries enough design personality to feel genuinely rooted in place. All 75 rooms draw visual cues from Chester's most recognizable icons — the Eastgate Clock, the historic city walls, and the UK's oldest racecourse. The real anchor is The Forge, an open-kitchen fire-and-charcoal restaurant that holds two AA Rosettes and is worth booking even if you're not staying.
