Hotel Goldene Rose Dinkelsbühl
Medieval shell, modern Scandinavian-adjacent interior. White and grey palette, exposed dark beams, lime-washed oak floors, large tapestry wall art nodding to the town's medieval past, hanging swing-style sofas. Understated, deliberate, anti-fussy luxury.
Spa access is included in your room rate — use it on your last morning too, for a €35 supplement until 3pm.
Why It Matters
Germany's first old-town spa hotel. The attic spa sits inside the original roof trusses with a 10-metre heated infinity pool gazing straight at St. George's Cathedral — at any time of year, day or night. Falstaff Hotel Guide 2025 rated it 94/100. Tablet Hotels member. Also home to the Rosensaal, a former ballroom now used as a concert and cinema venue.
A 560-year-old inn that Queen Victoria herself slept in back in 1891, now completely reborn. The exterior is still all timber-frame half-timbering and character; step inside and it's a sharp, contemporary design hotel with pale oak floors, dark original beams, and open bathrooms with mirrored mosaic surfaces. South Tyrolean architecture firm NOA stitched five medieval townhouses together into one cohesive property that reopened in December 2022 — and the attic infinity pool overlooking St. George's Cathedral tower is worth the trip on its own.

How you'll actually spend your days.
Cycling activities available for hotel guests — ideal for exploring the Romantic Road and the surrounding Bavarian countryside.
The hotel sits directly on Marktplatz with St. George's Gothic church (used in Netflix's 'The Empress') across the square. Ancient city walls, moats, and cobbled streets are walkable from the front door. The hotel's concierge can provide guidance on the town.
The Rosensaal is the former ballroom of the historic property — now a striking concert and cinema venue. The hotel's '100 Roses Club' brings live concerts here at least 6 times a year. Tickets include drinks before and during the interval. The space can also be booked for private events, team-building sessions, and conferences.
