Why It Matters
One of France's most storied family-owned restaurant-hotel combinations. The Auberge de l'Ill has held Michelin stars continuously since 1967. The 2016 Jouin Manku redesign gave the hotel its own architectural identity — the spa alone, with its indoor-outdoor Jacuzzi, monumental cast-concrete sculpture, and willow-leaf-carved walls, is worth the detour.
A 5-star boutique hotel on the banks of the River Ill in the tiny Alsatian village of Illhaeusern, run by the same Haeberlin-Baumann family that's held court here for over 150 years. The big draw is the adjacent 2-Michelin-star Auberge de l'Ill, but the hotel has evolved well beyond a gourmet overnight convenience — a 2016 design overhaul by Paris studio Jouin Manku added a contemporary barn-like extension with minimalist Japanese-inflected junior suites and a sprawling 980m² spa. Two very different vibes under one roof: the original chalet building with its dark wood paneling and Havana-style warmth, and the new glass-and-concrete wing where 7-metre cathedral ceilings and willow-leaf motifs carved into raw concrete set a more meditative tone.

Airstream Suite
A vintage Airstream trailer parked in the hotel grounds, visible from the balconies of the main building. A genuinely novel choice — renovated and fitted for hotel use. Guests with balcony views often mention spotting it. The backstory of why it was purchased is apparently charming; ask Marco Baumann directly.
Classic Room (Chalet Building)
Located in the original 1992 chalet-style building, these rooms have the Havana-style warmth the hotel was founded on: dark wood paneling, terracotta floors, plush sofas, warm tones, textured fabrics, and a mix of antique and modern furnishings. Most have a balcony or terrace with garden and river views. Each room is named after a cigar brand — Monte Cristo (#7) is a popular choice.
Fisherman's Cottage
A standalone cottage on the property with a distinct rustic-countryside character. Think Alsatian farmhouse warmth with the cigar-name theme carried through. A genuinely private option set apart from the main buildings. Limited details available publicly — best confirmed directly with the hotel.
Junior Suite (New Extension)
Part of the 2016 Jouin Manku-designed barn extension, these junior suites sit above the Spa des Saules and feel like a completely different hotel. Cathedral ceilings soar to 7 metres; materials are raw concrete, oak, and smooth stone — very little colour, very deliberate. The custom Jouin Manku beds sit centre-room wrapped in oversized fabric headboards. La Flor is one named example.

Five rooms in the new barn wing, each ~38m², sharing the extension's spare, raw aesthetic: concrete, oak, and grey stone. Less volume than the junior suites but still notably spacious and very well insulated. Great for guests who want the contemporary design without the full suite price.

In partnership with the Boatmen's Association of Illhaeusern, the hotel offers a flat-bottomed boat on which guests take their morning breakfast out onto the River Ill. Genuinely unusual and logistically charming — book in advance.
The hotel hosts special gala evenings where the Auberge de l'Ill prepares a special menu, the dining room is dressed up, and a dance orchestra plays — guests can spend the evening dining and dancing.
