Why It Matters
One of France's most storied family-owned restaurant-hotel combinations. The Auberge de l'Ill has held Michelin stars continuously since 1967. The 2016 Jouin Manku redesign gave the hotel its own architectural identity — the spa alone, with its indoor-outdoor Jacuzzi, monumental cast-concrete sculpture, and willow-leaf-carved walls, is worth the detour.
A 5-star boutique hotel on the banks of the River Ill in the tiny Alsatian village of Illhaeusern, run by the same Haeberlin-Baumann family that's held court here for over 150 years. The big draw is the adjacent 2-Michelin-star Auberge de l'Ill, but the hotel has evolved well beyond a gourmet overnight convenience — a 2016 design overhaul by Paris studio Jouin Manku added a contemporary barn-like extension with minimalist Japanese-inflected junior suites and a sprawling 980m² spa. Two very different vibes under one roof: the original chalet building with its dark wood paneling and Havana-style warmth, and the new glass-and-concrete wing where 7-metre cathedral ceilings and willow-leaf motifs carved into raw concrete set a more meditative tone.

The hotel hosts special gala evenings where the Auberge de l'Ill prepares a special menu, the dining room is dressed up, and a dance orchestra plays — guests can spend the evening dining and dancing.
