The whole hotel was built with timber from the estate's own Breitenburg Forest.
Hotel Breitenburg opened in late 2021 inside the converted 19th-century stables of the Rantzau family's Gut Osterholz estate, about 55km north of Hamburg. The outer stone walls stayed; everything inside was rebuilt with oak floors milled from the estate's own forest and travertine bathrooms throughout all 80 rooms. The spa is the real draw — a 7x15m infinity pool that opens to the canal via motorized panoramic windows, Finnish and bio saunas, a hammam, and relaxation rooms overlooking the Breitenburg Canal. Restaurant Johann runs on hyperlocal sourcing: venison shot on the estate, eggs from Hof Bimöhlen, cheese from Backensholzer Hof.
