Hôtel Restaurant Origines par Adrien Descouls
Unapologetically modern against medieval ruins. Warm neutrals, raw oak, local basalt stone. No fussiness — the drama comes from the views and the food.
Book the gastronomic restaurant at the same time you book your room — they fill independently and the dinner is the centrepiece of the stay.
Why It Matters
1 Michelin star, 1 Michelin Key hotel distinction, and a 3 Ecotable macaron sustainability rating. One of the few places in rural Auvergne where serious gastronomy and well-designed accommodation exist in the same building.
A 1-Michelin-star restaurant with a small hotel attached, set inside a striking modern building that presses right up against the crumbling walls of a 14th-century castle in Le Broc, a quiet village in the Puy-de-Dôme. The combo sounds dramatic — and it is. Chef Adrien Descouls is a local son who made the Top Chef semi-finals in 2018 and came home to cook the landscape: volcanic stone, mountain lakes, seasonal terroir. Eleven rooms sit at 450 metres altitude with panoramic views of the Auvergne volcanoes. The restaurant is the reason to make the trip; the rooms make it easy to stay.

On Property
How you'll actually spend your days.
Step behind the scenes into what the property calls 'The Bureau' — an intimate space where Chef Descouls shares his Auvergne childhood story and the culinary philosophy of Origines. Guests have also dined at the chef's table in the kitchen, watching service unfold.
A full multi-course Michelin-starred tasting menu built around Auvergne terroir. 6 or 8 services, with menus ranging €140–€200. The signature experience at Origines — guests describe it as theatrical and highly personal.
The Renaissance Château de Villeneuve-Lembron is 15 minutes away. The Boudes wine village offers local Auvergne wines to taste. Fairy chimney trails in the Vallée des Saints are a short drive. The property provides concierge services to help with access.
The Sancy massif (1,886m) is visible from the restaurant and accessible via car. Home to ski resorts Super-Besse, Le Mont-Dore, and Chastreix in winter, and volcanic lakes plus mountain trails in summer. The Cézallier and Livradois-Forez also offer hiking. Concierge can assist with planning.
The Via Arverna pilgrimage route passes just a few metres from the restaurant, linking Clermont-Ferrand to Cahors via Brioude and Rocamadour. The Le Broc stage runs from Issoire town centre to Jumeaux in Haute-Loire. Worth at least walking to the castle ruins above the hotel for the view.
The plateau terrace at the back of the restaurant is covered in local volcanic stone and furnished with armchairs. Open for aperitifs in summer (June–August) with panoramic views of the Sancy volcanoes. A proper introduction to the evening before the tasting menu begins.
