Listed on the Michelin Guide and part of The Originals Relais network. Chef Sébastien Duhamel — trained under Pierre Gagnaire and Jérôme Roy — runs the Bistrot Gourmand and holds the Maître Restaurateur title. Hôtel de la Mer sits directly on Plage des Chardons Bleus, one of the wilder stretches of Brittany's Côte des Légendes — a coastline of ancient rock formations, translucent water and not much else for miles. The hotel was fully redesigned in 2024 by Breton architectural firm Wunder, earning a 4-star rating in the process, and the result is a contemporary boutique feel inside a classic seaside building. Think natural materials, soft muted tones, and windows pointing straight at the Atlantic.
