Why It Matters
One of the first restaurants outside Copenhagen to earn a Michelin star (2016), and also holds the Michelin Green Star for sustainability. A 19th-century pavilion turned country house hotel, sitting on a park hilltop 50 metres from the shore of Præstø Fjord. The building dates to 1870 and was named after Frederick VII of Denmark. Today it holds 19 individually styled rooms and a Michelin one-star restaurant that is, frankly, the reason most people make the trip.
