Why It Matters
Chef Christophe Hay holds two Michelin stars and a Michelin Green Star for sustainability — and the eponymous restaurant is the entire reason the hotel exists. Hay raises his own Wagyu cattle, cultivates a permaculture vegetable garden, grows truffles, and sources Loire fish exclusively from his own appointed fisherman. The Sisley Spa is branded by the cosmetics house that happens to be headquartered in Blois. Opened June 2022 and already one of the most talked-about hotel openings in France.
A 17th-century former hospice commissioned by Gaston d'Orléans (brother of King Louis XIII) on the left bank of the Loire, transformed into a five-star Relais & Châteaux hotel by two-Michelin-starred chef Christophe Hay. The immense U-shaped building houses 44 rooms, two restaurants, a Pâtisserie Kiosk, a bar, and a 450 m² Sisley Spa — all conceived as a gastronomic maison where the kitchen is the true heart of the house. Interior designer Caroline Tissier filled the space with creamy sandbank whites, mineral grays, period beams, and Loire-inspired wallpapers depicting dragonflies and foliage.

Bikes and tricycles available directly from the hotel, connecting to the Loire à Vélo cycling route. Standard bike rental €26; tricycle €47. The Loire Valley cycling circuit passes the hotel's doorstep.
The hotel has a partnership with a local Hertz office for château touring. The concierge can arrange drop-off and pickup at the hotel. Note: booking through the hotel requires full insurance; booking directly with Hertz keeps costs lower but involves a drop-off surcharge. Coordination can require some back-and-forth.
The hotel's location puts Blois Castle at a 12-minute walk, Chambord at 16 km, Chaumont-sur-Loire at 17 km, Amboise and Chenonceau within 45 minutes by car. The concierge arranges itineraries and transport. This is the primary activity draw for most guests.
Christophe Hay's permaculture kitchen garden — about a 15-minute walk from the hotel — includes an asparagus plantation, citrus greenhouse, truffle orchard, and fruit and vegetable beds. Guided tours run Monday to Saturday from 11am to 11:45am. Bookable through the hotel concierge.
