Why It Matters
First Vignette Collection (IHG's independent luxury brand) to open in Spain. The estate dates to 1475 and was a functioning olive mill — the fine dining restaurant is actually set inside the original tafona (mill). Chef Dani Chávez-Bello brings decades of Michelin-level experience including a stint at El Bulli. The spa uses organic products including estate-produced olive oil and honey.
A 15th-century olive mill turned five-star rural estate, Finca Banyols sits on 250 acres in the hills above Alaró, backed by the UNESCO-listed Serra de Tramuntana. The original stone walls, exposed timber beams, and hand-hewn Santanyi stone floors are all still here — what's been added is a layer of serious contemporary comfort. It opened in early 2026 as the first Vignette Collection property in Spain, with 32 rooms, a fine dining restaurant run by a chef who trained at El Bulli, and a spa that uses honey and olive oil harvested right on the estate.

The entry-level room and still very comfortable. Each opens directly onto the garden with views of centuries-old olive trees and the Tramuntana. Inside: exposed wooden beam ceilings, country-inspired furnishings, underfloor heating, and a king bed dressed in Egyptian cotton. Small — 20 to 22 sqm — so don't expect sprawling space. But the garden access makes it feel bigger than the numbers suggest.

The mid-tier rooms are located around the main courtyard and preserve the estate's original character most strongly — centuries-old stone walls, timber-beamed ceilings, and the kind of organic warmth that only genuinely old spaces have.
