Eunice Hotel Gastronómico is chef José Manuel Pascua's personal tribute to his late grandmother, Eunice Fortes, whose kitchen instincts and hospitality shaped everything he does. The building is a sober 19th-century Castilian palace sharing a wall with the Monterrey Palace — one of the finest Renaissance buildings in Spain — and the interior design by local studio Idi evokes a proper Salamantine townhouse rather than a generic luxury hotel. Thirteen rooms only, two dining spaces, a curated art collection, and a breakfast that was nominated finalist at Madrid Fusión 2025. Look, this place is more restaurant-with-rooms than hotel-with-restaurant, and that is the point.
