Eremito is a contemporary hermitage built on the ruins of a 14th-century retreat, deep inside the UNESCO Monte Peglia Biosphere Reserve in Umbria. The concept is radical subtraction: no Wi-Fi, no TV, no phones in communal spaces, 17 stone-walled Celluzze (monk's cells), and a silent candlelit dinner accompanied by Gregorian chant every evening. All meals are included, the food is vegetarian, and the energy comes almost entirely from solar. It is, frankly, not for everyone — and it says so on the website.
