The building is a genuine architectural landmark — one of the city's finest 19th-century private mansions. And the restaurant, with its seasonal Breton produce menu from €39, consistently draws both hotel guests and locals.
A stately 1840 shipbuilder's mansion in the medieval heart of Saint-Brieuc, Edgar has worn several identities over its lifetime — convent, police station — before landing as a 4-star boutique hotel and gastronomic restaurant. The original wood floors and grand ground-floor volumes survive intact, but the rooms themselves lean decisively modern: bold wallpapers, walk-in showers, Chromecast TVs, and attic suites with sloping mansard ceilings that feel genuinely cosy rather than cramped. Add a small but serious Cinq Mondes spa with hammam, sauna and a proper treatment menu, and a glass-roofed restaurant where chef Sébastien David runs fish straight from the Guilvinec auction hall to your plate, and you have one of Brittany's more complete boutique packages.
