A stately 1840 shipbuilder's mansion in the medieval heart of Saint-Brieuc, Edgar has worn several identities over its lifetime — convent, police station — before landing as a 4-star boutique hotel and gastronomic restaurant. The original wood floors and grand ground-floor volumes survive intact, but the rooms themselves lean decisively modern: bold wallpapers, walk-in showers, Chromecast TVs, and attic suites with sloping mansard ceilings that feel genuinely cosy rather than cramped.
