A former 18th-century bourgeois country house — known locally as a 'folie' — converted in 2018 into a 15-room boutique hotel by the Tarbouriech family, one of the Languedoc's most celebrated oyster-farming dynasties. The estate sits between Picpoul vineyards and the Thau Lagoon opposite Sète, and oysters run through everything here: the two restaurants, the Les Nacres bar, and a spa that has literally built its treatment protocols around oyster shells and mother-of-pearl. The 25-metre heated outdoor pool, lush Mediterranean gardens, and biodynamic kitchen garden round out a property that is genuinely harder to leave than to find.

Cabanier Lodge
On the first floor of a 13th-century barn with traditional sagne (reed) roof, raw stone floors, rough-cast concrete walls and old exposed beams. The most architecturally striking room on the property. Between 50–65m² depending on configuration, with terraces of 15–20m² and cross-views over vineyards and the courtyard. Island bath and Italian shower. Sleeps up to 4.

Casanova Suite
Boudoir atmosphere in a 48m² tower suite with a striking 17th-century copper bathtub and Italian shower. The name comes from local legend: Casanova apparently visited the Languedoc specifically for an oyster cure, and stayed near this very estate. King or twin configuration, sleeps 2.

Japan Room
A 26m² room where the design plays Japanese minimalism against Mediterranean warmth. The standout feature is a large Japanese-style soaking tub that opens directly onto a generous 36m² private terrace tucked into a green island. Stone and burnt wood on one side, the southern sun on the other.

Jefferson Room
Named for Thomas Jefferson, a famously enthusiastic promoter of the Canal du Midi and the Languedoc's industrial innovation. A loft-style 23m² bedroom with an open-plan bathroom (bathtub and walk-in shower) and a 10m² private terrace overlooking the vineyards. The smallest room on the property — compact but characterful.

Lodge Jardin
The most private option on the property. 65m² lodge with its own 80m² private garden and a private Jacuzzi. Two bedrooms including one duplex layout, Italian shower, vineyard views. Extra beds available for up to 5 guests (supplement of €80/adult, €40/child). The closest thing to a private villa the Domaine offers.

Nacre Suite
The grandest room on the property. 55m² suite in the tower of the old manor house, with double bath and walk-in shower and a 12m² private terrace overlooking the garden, pool, vineyards and lagoon. Contemporary decor in a harmony of whites — pearl-toned walls, old stone, and a 'pearly' atmosphere that earns the name. King or twin configuration, sleeps 2.

Tarbouriech Lodge
Also on the first floor of the 13th-century barn, this 61m² lodge has a double bed and a convertible bench seat (doubles as an extra double), making it suitable for up to 4 guests. Terrace of 10–15m² and walk-in shower. Stone floor, top-of-the-range finishes throughout.

How you'll actually spend your days.
Bikes available for exploring the surrounding vineyards, the Canal du Midi (UNESCO World Heritage Site) and the Bagnas nature reserve. The domaine is certified Accueil Vélo (cycle-friendly).
The estate's kitchen garden is farmed biodynamically using the lunar calendar. Guests can see how produce is grown for the restaurant — herbs, vegetables, fruits — and learn about the circular economy philosophy of the Tarbouriech family.
Available to non-resident guests. Pool access from 12:00–18:00 with a deckchair, a welcome drink at the Pool House, and a €40 restaurant credit. Adults only, no pets in pool area. Costs €85 per person.
Visits to the Tarbouriech family's experimental 'MadLab' — an eco-innovation space focused on recovering and transforming natural and industrial waste from the lagoon. Workshops for adults and children.
Depart from the tasting counter pontoon for an hour-long tour of the Thau Lagoon on a traditional oyster-farming barge. See the patented Solar Tide farming method up close — the solar and wind-powered rope-lifting system that gives Tarbouriech oysters their distinctive pink tinge. Available July and August.
Learn to taste and identify Tarbouriech special oysters, understand the different varieties (Spéciales, Seven, Réserve), and pair them with local wines. Run by the domaine's expert team.

Multiple seminar rooms at the Domaine and adjacent Mas Tarbouriech. Capacity: 22 in U-shape, 80 standing, 50 theatre-style. Full property event capacity for overnight events is 53 people across all rooms, suites and lodges.
