Why It Matters

The only hotel in France built around a proprietary oyster-therapy concept (Ostréathérapie®), developed over eight years with the CNRS and Université de Montpellier. A former 18th-century bourgeois country house — known locally as a 'folie' — converted in 2018 into a 15-room boutique hotel by the Tarbouriech family, one of the Languedoc's most celebrated oyster-farming dynasties. The estate sits between Picpoul vineyards and the Thau Lagoon opposite Sète, and oysters run through everything here: the two restaurants, the Les Nacres bar, and a spa that has literally built its treatment protocols around oyster shells and mother-of-pearl. The 25-metre heated outdoor pool, lush Mediterranean gardens, and biodynamic kitchen garden round out a property that is genuinely harder to leave than to find.

Depart from the tasting counter pontoon for an hour-long tour of the Thau Lagoon on a traditional oyster-farming barge. See the patented Solar Tide farming method up close — the solar and wind-powered rope-lifting system that gives Tarbouriech oysters their distinctive pink tinge. Available July and August.
