Domaine de Biar is an 18th-century Montpellier 'folie' — the aristocratic kind of country folly — that has been painstakingly restored into a 4-star eco hotel on 50 hectares of parkland, meadows, ancient trees, and horse paddocks. It sits just 7 km from central Montpellier and 7 km from the sea, which is a rare combination. The Eoden group took it over in 2021 and overlaid a serious eco-responsible philosophy on the historic bones: Green Key certification, Ecotable-labeled dining, organic farming on site, and rooms deliberately stripped of televisions to enforce the disconnect. Thirteen individually named rooms honor the figures who shaped the estate across its history. The restaurant, La Table de Biar, has earned 2 Gault & Millau Toques and the property holds 2 Michelin Keys.

Named after Joseph Bonnier de la Mosson — treasurer to Louis XV who acquired the estate in 1727 and undertook the major works that shaped it. A tribute to the Age of Enlightenment at 44 m². One of the larger suites with a sense of history baked into every detail.

Canopée
The largest suite at 56 m² and the highest in the building, the Canopée sits at treetop level with panoramic views across the entire estate from the entrance all the way to the paddocks. Double aspect means light floods in from two directions. The bathroom has both a full bathtub and an Italian walk-in shower, plus a separate lounge area. This is the one to book if budget allows.
