Why It Matters

One of very few properties in the Montpellier area to hold 2 Michelin Keys. Genuine eco hotel credentials (Green Key, Ecotable) without sacrificing comfort. The equicoaching program and 12th-century vaulted spa room are legitimately unusual. Chef Mathieu Garcin's cuisine earns serious recognition from Gault & Millau. Domaine de Biar is an 18th-century Montpellier 'folie' — the aristocratic kind of country folly — that has been painstakingly restored into a 4-star eco hotel on 50 hectares of parkland, meadows, ancient trees, and horse paddocks. It sits just 7 km from central Montpellier and 7 km from the sea, which is a rare combination. The Eoden group took it over in 2021 and overlaid a serious eco-responsible philosophy on the historic bones: Green Key certification, Ecotable-labeled dining, organic farming on site, and rooms deliberately stripped of televisions to enforce the disconnect. Thirteen individually named rooms honor the figures who shaped the estate across its history. The restaurant, La Table de Biar, has earned 2 Gault & Millau Toques and the property holds 2 Michelin Keys.
