Why It Matters
Continuous Michelin star at the Zirbelstube since 1983 — one of the longest-running star records in southern Germany. Member of The Leading Hotels of the World since 1995. The Colombi sits on the edge of the old town, directly opposite the green expanse of Colombi Park and the neo-Gothic Colombischlössle castle. Rooms face either the Freiburg Minster spire or the park, and somehow the building manages to feel insulated from the street despite sitting smack in the city center. The Michelin-starred Zirbelstube restaurant has held its star continuously since 1983 — which tells you something about consistency.
