Clos Vauban is an intimate 8-room Relais & Châteaux property set inside a 19th-century Haussmann mansion perched on the ancient ramparts of Langres — the birthplace of Diderot and home to the largest remaining fortified city in Europe. It is the project of Laurent and Martine Petit, the couple behind the three-Michelin-star Clos des Sens in Annecy, who handed daily operations to young chef Valentin Loison and sommelier Anaïs Bercegeay. The food is the main event: Bulle d'Osier holds 2 Michelin stars and a Green Star, and Mirabelle holds a Bib Gourmand. The building sits in the middle of a 3,000 m² kitchen garden that feeds both kitchens directly.

Langres' 12th-century Gothic cathedral, a few minutes' walk from the hotel. Notable stained glass and Romanesque cloister.
The museum dedicated to philosopher and Encyclopédie editor Denis Diderot, who was born in Langres. Located in the city just a short walk from the hotel. Manuscripts, personal objects, and Enlightenment-era exhibits.
A remarkable garden on the edge of the Parc National de Forêts, known for its stone snail sculptures and maintained by volunteers. A leisurely afternoon destination.
The 3,000 m² potager and aromatic herb garden is open for guests to wander during the growing season. It feeds both restaurants directly and changes week by week through the year.
A large peaceful reservoir lake about 3 km from the hotel, surrounded by wooded hills. Walking paths ring the water and it is excellent for birdwatching, cycling, and picnicking.
France's most recent national park (created 2019), straddling Haute-Marne and Côte-d'Or. Forests, meadows, and village architecture. Excellent hiking and cycling trails. About 30–45 minutes from Langres by car.
The 3.5 km circuit of Langres' medieval walls — the longest remaining fortified enclosure in Europe — begins steps from the hotel. Views over the valley are particularly good from the south ramparts.
