There are times when a hotel and a restaurant are practically inseparable; this 1822 coaching inn might not have been preserved had it not been, since 1907, something of a fixture on Alsace’s culinary scene. Now under the direction of Carole and Pascal Bastian — the latter of whom worked in this very kitchen under chef Ferdinand Mischler — the Auberge du Cheval Blanc et Spa is a chic and surprisingly contemporary boutique hotel, whose 21 eclectic-luxe rooms and suites are joined by a lovely modern spa, added in 2015. And then there’s the not-so-small matter of the restaurant’s MICHELIN Star….
