Castlemartyr Resort
Grand Irish country estate. Formal but not stuffy. History is everywhere, from the Lafranchini ceiling in the bar to the castle ruins across the lawn, but the guest experience is genuinely modern luxury — especially at Terre.
Book Terre well in advance — it's a tiny, intimate restaurant and demand is high since the second Michelin star
Why It Matters
One of the very few hotels in Ireland with a two Michelin star restaurant (Terre, opened 2022, earned its second star within 18 months). The estate has genuine historic credentials — Knights Templar, Walter Raleigh, and the Earl of Cork all passed through — giving the luxury a depth of character uncommon even in high-end resorts.
Castlemartyr Resort sits on 220 acres of East Cork parkland, centered around an 18th-century manor house that stands just steps from the ivy-draped ruins of an 800-year-old Knights Templar castle. It's as much of a history lesson as it is a hotel stay — and the two Michelin stars at on-site restaurant Terre mean the food holds its own against the dramatic backdrop. Opened in 2008 and restored to offer 108 rooms and suites (ranging from 500 to 3,000 sq ft), plus self-catering residences, a Ron Kirby-designed 18-hole golf course, and a substantial ESPA spa.
