Boutiquehotel Blaue Burg Falkenstein
Mountain chalet-chic meets design hotel. Natural materials — old timber, natural stone, black steel — paired with Italian tiles and handmade designer lamps. The vibe is cozy-luxe without stuffiness. The hotel calls itself 'high cooking, lovely rooming' and that about covers it.
PAVO only runs Thursday through Sunday evenings at 18:00 — book well in advance, it fills up fast
Why It Matters
Germany's highest-situated Michelin-starred restaurant (PAVO, 1 star since 2020, held for 5 consecutive years). The hotel itself received 1 Michelin Key in 2025. Adjacent to Germany's oldest castle ruins. Family-run by the Schlachter family. Interior designed by Austrian architect Sibylle Schaschl. Also holds Gault & Millau 3 Hauben and Falstaff 3 Forks.
Blaue Burg sits at 1,250 meters on the Falkenstein peak in the Allgäu Alps — one of the most dramatically positioned hotels in Germany. The property started as the draw for restaurant PAVO, a 1 Michelin-starred kitchen run by chef-owner Simon Schlachter. But once guests realized driving back down the mountain at night was a terrible idea, the family expanded into a 17-room boutique hotel. It's a genuine family operation. Rooms are individually themed and named, ranging from 28 m² Moroccan-style quarters to a 75 m² private spa suite with its own sauna. No pool, no air conditioning, no conference center — and honestly none of that matters up here.

How you'll actually spend your days.
Exclusive horse-drawn carriage ride for two through the Pfronten valley. Included in the 'Ja Ich Will' romance package.
Germany's oldest castle ruins sit just 300 meters from the hotel on the same peak. King Ludwig II had planned a fourth castle here after Neuschwanstein. A short walk delivers dramatic views and genuine history.
Beyond just eating at PAVO and Restaurant 1250, the hotel sells its own cookbook, handmade soy sauce ('Blaue Shoyu'), and other culinary products via its online shop. The 'Auffahren und Entspannen' package includes a Culinary Club Genussbox to take home.
Cycling routes through the Pfronten valley and surrounding Allgäu region are accessible from the hotel.
Trail access starts directly from the hotel door. The surrounding Allgäu Alps offer routes from gentle ridge walks to more demanding ascents. The castle ruins of Falkenstein are a 5-minute stroll — Germany's oldest castle ruins and the intended site of King Ludwig II's never-built third castle.
Pfronten and the surrounding Allgäu Alps offer skiing in winter. The Breitenbergbahn cable car is about a 10-minute drive away. Both downhill and cross-country skiing are available in the area.
