Why It Matters
One of the few places in Germany where a genuine Michelin-starred restaurant (1 star, awarded June 2025 to new head chef Fabian Obergfell) sits inside a 10-room boutique hotel. The building dates to 1603 and served as a grain mill for St. Blasien Abbey. The package — heritage property, Black Forest nature, and fine dining at that level — is rare at this scale.
A 1603-built grain mill on the southern edge of the Black Forest, converted into a 10-room adults-only boutique hotel by owner Marius Tröndle in 2019. The mill stream still runs past the terrace. Timber beams and tiled stoves carry the building's history, while the interiors are modern and deliberately pared back. The real draw is the on-site restaurant, which holds a Michelin star and seats just a handful of tables.
