Perched right on the rim of the Ramon Crater — the world's largest erosion crater — Beresheet sits 800 meters above sea level in Israel's Negev Desert. Opened in 2011 as part of Isrotel's Exclusive Collection, it's 111 villas spread across 50,000 square meters of raw desert, built with local stone and wood so it feels like it grew out of the landscape. The infinity pool at the crater's edge is genuinely one of the world's great hotel pools, and wild ibex routinely wander through the grounds like they own the place.
